The notion of balance is used for a wine whose various groups of flavors (acidity and sweetness in white wines; tannins, acidity and mellowness in red wines) balance each other satisfactorily, without a particular group dominating or lacking, thus creating a subjective feeling of balance. This structural and quantitative notion is different from that of harmony, which is esthetic and qualitative.
